Shrimp Roll Fried Rice
This Shrimp Roll Fried Rice transforms crispy shrimp rolls into a flavorful fried rice dish. Combining sautéed vegetables, scrambled eggs, and savory soy sauce, it’s a quick and satisfying meal. Perfect for using leftover rice or a weeknight dinner.

- 1 Box of Handy Shrimp Rolls
- Long grain brown or white rice (day-old and cold rice preferred)
- 1 Small white onion
- 1 Bag of frozen peas and carrots
- 2 Eggs
- Sesame oil
- Soy sauce
- Green onions

Cook the shrimp rolls according to package instructions and set aside.

Dice the onion and prepare all other ingredients.

Heat sesame oil in a large skillet or wok over medium-high heat.

Add diced onion and frozen peas and carrots; sauté about 5 minutes until tender.

Push veggies to one side of the pan, pour beaten eggs into empty side, scramble until cooked.

Add the cooked rice to the pan, breaking up clumps, and stir everything together.

Pour in soy sauce and cook for another 5 minutes, stirring frequently until rice is heated through.
