Shrimp Roll Fried Rice

This Shrimp Roll Fried Rice transforms crispy shrimp rolls into a flavorful fried rice dish. Combining sautéed vegetables, scrambled eggs, and savory soy sauce, it’s a quick and satisfying meal. Perfect for using leftover rice or a weeknight dinner.

  • 1 Box of Handy Shrimp Rolls
  • Long grain brown or white rice (day-old and cold rice preferred)
  • 1 Small white onion
  • 1 Bag of frozen peas and carrots
  • 2 Eggs
  • Sesame oil
  • Soy sauce
  • Green onions
  • Cook the shrimp rolls according to package instructions and set aside.

  • Dice the onion and prepare all other ingredients.

  • Heat sesame oil in a large skillet or wok over medium-high heat.

  • Add diced onion and frozen peas and carrots; sauté about 5 minutes until tender.

  • Push veggies to one side of the pan, pour beaten eggs into empty side, scramble until cooked.

  • Add the cooked rice to the pan, breaking up clumps, and stir everything together.

  • Pour in soy sauce and cook for another 5 minutes, stirring frequently until rice is heated through.

  • Slice shrimp rolls in half and place on top of fried rice.

  • Garnish with sliced green onions and serve immediately.
