Handy Shrimp Birds’ Nests
2 cups hot water or dashi stock
2 Tbsp miso paste (adjust to taste)
½ block silken or soft tofu, cut into ½-inch cubes
Green onions, chopped (for garnish)
Optional: sesame oil, togarashi (Japanese seven spice)
Bring 2 cups of water or dashi stock to a boil in a small saucepan.
Cut tofu into ½-inch cubes and set aside.
Chop green onions for garnish.
Whisk miso paste in a small bowl with a ladle of hot broth until smooth; set aside.
