  • 3 Russet Potatoes
  • 2 tsp Sea Salt
  • 1 tsp Garlic Powder
  • 1 tsp Paprika
  • 1 tbsp Olive Oil
  • 1 – 8 oz cup Handy Crab Meat
  • 2 tbsp Flour
  • 2 tbsp Butter
  • 1 1/2 cup Milk
  • 2 cups White or Yellow Cheddar
  • Green Onions
  • Seafood Seasoning
  • Wash and cut 3 russet potatoes into fries

  • Soak fries in cold water for 1 hour to remove starch

  • Preheat oven to 350°F for finishing dish

  • Grate cheddar cheese and chop green onions (or scallions)

  • Measure butter, flour, milk, crab meat, and seasonings

  • Pre‑soak fries: Soak cut potatoes in cold water for 1 hour, then pat dry.

  • Air‑fry fries: Toss potatoes with olive oil, sea salt, garlic powder, and paprika. Air-fry at 400°F for about 25 minutes, until golden brown and crispy.

  • Make sauce: In a saucepan, melt butter over medium heat. Stir in flour to create a roux, then whisk in milk until thickened. Add shredded cheddar and 6 oz crab meat; stir until melted and smooth.

  • Assemble dish: Spread air-fried fries in a cast‑iron skillet or oven-safe dish. Pour cheddar–crab sauce over the fries. Top with reserved crab meat and extra shredded cheddar.

  • Bake: Place under a 350°F oven or broiler just until cheese is bubbly and sauce is warm, about 15 minutes.

  • Garnish: Sprinkle with seafood seasoning and chopped green onions. Serve immediately.
