Infuse your sushi night with a bold fusion twist—crispy soft-shell crab wrapped in sushi rice and nori, layered with kimchi and fresh veggies for a Korean-inspired spider roll experience.

  • 4 each Handy Soft Crab (Jumbo), Thawed
  • 4 each Nori Sheets (toasted/warmed)
  • 8 TBSP Sushi Rice – Chilled
  • 4 oz. Julienned Cucumber (quickly pickled in hot rice vinegar then chilled)
  • 4 oz. Kimchi
  • 8 Slices Avocado, Ripe
  • 2 oz. Sriracha Mayo (1.5 oz. mayo – 0.5 oz. Sriracha)
  • Dash Tenkasu (Tempura Crumbs)
  • Dash Black Sesame Seeds

Tempura Batter

  • 1 Cup All-Purpose Flour
  • 1 TBSP Cornstarch
  • 1 Egg
  • 1 Cup Seltzer water
  • Dash Sea Salt
  • Thaw crab and prepare sushi rice in advance.

  • Have cucumber julienned and kimchi drained/prepped.

  • Toast or warm nori sheets to make them pliable.

  1. Spread sushi rice evenly over nori, leaving space for rolling.

  2. Lay the soft-shell crab, kimchi, and cucumber in the center.

  3. Roll tightly with a sushi mat; seal and slice into pieces.

  4. Serve immediately while crisp.
