A hearty Maryland classic featuring savory tomatoes, vegetables, OLD BAY® seasoning, and flavorful Handy Claw Crab Meat.
- 16oz lb. Handy Claw Crab Meat
- ¼ cup onion, diced
- 1 tbsp. butter
- 1 cup beef or chicken stock
- 1 (28 oz.) can crushed tomatoes
- 1 lb. frozen mixed vegetables (peas, carrots, corn, and green beans)
- 1 tbsp. fresh parsley, chopped
- 1 tbsp. OLD BAY® Seasoning
Dice the onion and chop the fresh parsley. Drain the Handy Claw Crab Meat of any excess liquid and gently check for shells.
- In a large pot over medium heat, melt the butter and add the diced onion. Cook for 4–5 minutes, or until translucent without browning.
- Add the stock and crushed tomatoes. Stir to combine and bring the soup to a simmer.
- Add the frozen vegetables and cook for several minutes, allowing the soup to return to a simmer and the vegetables to heat through.
- Gently fold in the Handy Claw Crab Meat and season with OLD BAY® Seasoning. Stir just until combined and heated through.
- Remove from heat and portion into bowls. Garnish with fresh chopped parsley and serve immediately.
