Shrimp Roll Fried Rice

Ingredients
  • 1 Box of Handy Shrimp Rolls
  • Long grain brown or white rice (day-old and cold rice preferred) 
  • 1 Small white onion
  • 1 Bag of frozen peas and carrots 
  • 2 Eggs
  • Sesame oil
  • Soy sauce
  • Green onions

 

Shrimp Rolls

BAKE: Preheat oven. Spray or coat pan with oil. Place rolls on pan and place pan on the middle rack of oven.

  • Cooking from thawed is not recommended
  • FROM FROZEN: 425 °F for 10-15 minutes

AIR FRYER: Spray basket with oil and place the rolls in basket. Set fryer at 380 °F.

  • Cooking from thawed is not recommended
  • FROM FROZEN: 380 °F for 7 minutes

Fried Rice

Preheat the skillet to medium-high heat and pour sesame oil into the bottom of the skillet 

Add the onion, peas, and carrots. Fry this until they are tender.

Move the veggies to the side of the skillet. Pour the beaten eggs onto the opposite side. Use a spatula to scramble the eggs.

Mix the scrambled eggs together with the veggies, and add rice.

Pour the soy sauce and stir the mixture until it is heated throughout.

Cut shrimp rolls in half and place them on top of the fried rice.

Garnish with green onions and enjoy.
